How long can you trust your hops? The science behind your age and aroma

The passage of time in hops: a gradual but inevitable erosion

Like a ripe fruit that loses its juiciness over the days, hops are natural ingredients with a limited life cycle. Its aroma, flavor and ability to contribute bitterness are not static: over time, they deteriorate due to environmental factors and their organic nature.

What factors accelerate the decline?

Constant exposure to light, heat, oxygen and time are the main enemies of hops. Oxidation caused by oxygen is especially harmful, so many brands opt for oxygen -proof packaging in vacuum or inert gas forms, which act as shields to preserve their freshness. For example, a variety with a 25% IEH indicates that, after six months to 20 ° C, that proportion of its initial alpha acids will have lost, reducing its potential to contribute bitterness in that period. Controlling this index can help you decide what hops use and when to discard the old.

Modern tools to predict how much your hops looks

Thanks to technological advances, we can now more precisely evaluate the quality of our hops based on their age, storage and variety conditions. Some specialized programs allow you to enter data such as the type of reservoir, the storage temperature and the time elapsed to obtain a calculation of the remaining alpha acid level.

With these tools, home breeders or professionals can decide when it is convenient to use those old hops for aroma in the Dry Hopping or cooking, and which ones reserve for their main function, thus preserving the intensity and freshness of the final profile.

Small secrets to make the most of your aged hops

However tempting it is to reuse old hops, it is best to use them in the stages where their freshness is required, such as boiling or cooking, where bitterness can completely mask the loss of aroma. For aroma and Dry Hopping phases, it is advisable to resort to recent hops, preferably of crops of the same year.
